
Pumpkin Brownies


Celebrate Halloween with the perfect pumpkin spiced brownies. Soft and gooey, enjoy with a nice hot drink.
Ingredients and Method
Ingredients
- 120g plain flour
- 200g brown sugar
- 200g dark chocolate
- 250g unsatled butter
- 100g caster sugar
- 3 eggs ( +1 yolk)
- 1 tsp vanilla extract
- 80g cocoa powder
- 200g pumpkin puree
- 2 tsp pumpkin spice mixed
- pinch of salt
- 1 tsp baking powder
Method
- Preheat the oven to 180C/160F/Gas Mark 4.
- Grease and line a 9inch square ovenproof dish.
- Melt the chocolate and butter in a bowl over a pot of boiling water. Make sure the bottom of the bowl doesn't touch the boiling water and mix well. Leave aside to cool.
- Using a hand whisk or mixer, combine both sugars, vanilla extract and eggs until mixed through.
- Slowly add the melted chocolate and mix together.
- Add the flour, salt, baking powder and cocoa powder and mix unitil combined. Gently fold in the pumpkin puree and pumpkin spice mix then pour into your dish.
- Bake in the oven for 40-50 minutes. Once cooked leave to cool before serving.
