Pumpkin Brownies

Celebrate Halloween with the perfect pumpkin spiced brownies. Soft and gooey, enjoy with a nice hot drink. 

Ingredients and Method

Ingredients

  • 120g plain flour
  • 200g brown sugar
  • 200g dark chocolate
  • 250g unsatled butter
  • 100g caster sugar
  • 3 eggs ( +1 yolk)
  • 1 tsp vanilla extract
  • 80g cocoa powder
  • 200g pumpkin puree
  • 2 tsp pumpkin spice mixed
  • pinch of salt
  • 1 tsp baking powder

Method

  1. Preheat the oven to 180C/160F/Gas Mark 4.
  2. Grease and line a 9inch square ovenproof dish.
  3. Melt the chocolate and butter in a bowl over a pot of boiling water. Make sure the bottom of the bowl doesn't touch the boiling water and mix well. Leave aside to cool.
  4. Using a hand whisk or mixer, combine both sugars, vanilla extract and eggs until mixed through.
  5. Slowly add the melted chocolate and mix together.
  6. Add the flour, salt, baking powder and cocoa powder and mix unitil combined. Gently fold in the pumpkin puree and pumpkin spice mix then pour into your dish.
  7. Bake in the oven for 40-50 minutes. Once cooked leave to cool before serving.
