How to Store Root Vegetables for Maximum Freshness

Temperature:
Temperature is one of the most important factors in the success of root vegetables. Root vegetables grow best in cold, dark, humid conditions. The ideal temperature for root vegetables is 32-40 degrees Fahrenheit (about 0 degrees Celsius), which is why most root vegetables are best stored in your fridge crisper drawer.
Washing Vegetables:
The dirt that clings to your root vegetables may seem like a no-brainer, but washing them removes the protective layer that keeps them fresh. All you have to do is clean off any loose dirt with a vegetable brush before storing. Don't wash it before storing.
Breathing Space:
Avoid storing root vegetables in airtight containers. Trapped moisture can lead to spoilage. Instead, use a breathable container with good ventilation, or a mesh bag.
Leafy Tops:
The leafy green tops of root vegetables, such as carrots and beets, are edible, but they also attract moisture from the root. Remove the leafy tops and leave about 1 inch of stem attached.
Exceptions:
Be aware that some root vegetables, such as potatoes or garlic, do not tolerate cold temperatures and should be kept in a cool, dark place, such as a cupboard or pantry.
