Mini Egg Chocolate Cake

A delicious silky smooth chocolate cake finished with crunchy mini eggs, the perfect treat this Easter.

Ingredients and Method

Ingredients

  • 100g unsalted butter
  • 2 eggs
  • 280g brown sugar
  • 1 tsp baking powder
  • 1 tsp bicarbonate soda
  • 200ml milk/almond milk
  • 75g cocoa powder
  • 120g mini eggs
  • 4 chocolate flakes (cut into pieces)
  • 300g icing sugar

Method

  1. Preheat the oven to 180C and grease and line a deep cake tin
  2. Mix the sugar and butter together until combined then add the eggs
  3. Sift the flour, baking powder and bicarbonate soda and mix until combined
  4. Using a separate bowl, add the milk and cocoa powder and mix then add to the mixture, mix until combined
  5. Spoon the mixture into the cake tin and cook for around 1 hour
  6. To make the topping, mix the cocoa powder until it forms a paste
  7. Add the butter and icing sugar and beat until a creamy mixture forms
  8. Spread on top of the cake, sprinkle with the chopped flakes and mini eggs
