
Mini Egg Chocolate Cake


A delicious silky smooth chocolate cake finished with crunchy mini eggs, the perfect treat this Easter.
Ingredients and Method
Ingredients
- 100g unsalted butter
- 2 eggs
- 280g brown sugar
- 1 tsp baking powder
- 1 tsp bicarbonate soda
- 200ml milk/almond milk
- 75g cocoa powder
- 120g mini eggs
- 4 chocolate flakes (cut into pieces)
- 300g icing sugar
Method
- Preheat the oven to 180C and grease and line a deep cake tin
- Mix the sugar and butter together until combined then add the eggs
- Sift the flour, baking powder and bicarbonate soda and mix until combined
- Using a separate bowl, add the milk and cocoa powder and mix then add to the mixture, mix until combined
- Spoon the mixture into the cake tin and cook for around 1 hour
- To make the topping, mix the cocoa powder until it forms a paste
- Add the butter and icing sugar and beat until a creamy mixture forms
- Spread on top of the cake, sprinkle with the chopped flakes and mini eggs
