Ingredients and Method

Ingredients

  • For the salsa:
  • 4 ripe tomatoes, chopped
  • 1 red onion, finely diced
  • 1-2 fresh green chilies, finely chopped
  • 1 clove of garlic
  • Juice of 1 lime
  • Handful of fresh coriander
  • For the guacamole:
  • 2 ripe avocados
  • 1 lime, juiced
  • 1 small red onion, finely diced
  • 1-2 small tomatoes, seeded and diced
  • 1-2 tbsp chopped fresh coriander
  • 1 small jalapeño

Method

  1. For the Salsa: In a bowl, combine the chopped tomatoes, diced red onion, chopped green chilies, minced garlic, and chopped coriander.
  2. Squeeze the juice of one lime over the mixture and season with salt and pepper according to your taste.
  3. For best flavour, let the salsa sit in the refrigerator for about 30 minutes before serving to allow the flavours to meld together.
  4. For the Guacamole: Cut the avocados in half, remove the pit, and scoop the flesh into a mixing bowl. Mash the avocados with a fork until you achieve your desired consistency.
  5. Add the lime juice to the mashed avocado and mix well to incorporate.
  6. Stir in the diced red onion, diced tomatoes, chopped coriander, and chopped chili (if using).
  7. Season the guacamole with salt and pepper to taste. Mix everything together gently.
