
Chilli Salsa with Lime Guacamole

Ingredients and Method
Ingredients
- For the salsa:
- 4 ripe tomatoes, chopped
- 1 red onion, finely diced
- 1-2 fresh green chilies, finely chopped
- 1 clove of garlic
- Juice of 1 lime
- Handful of fresh coriander
- For the guacamole:
- 2 ripe avocados
- 1 lime, juiced
- 1 small red onion, finely diced
- 1-2 small tomatoes, seeded and diced
- 1-2 tbsp chopped fresh coriander
- 1 small jalapeño
Method
- For the Salsa: In a bowl, combine the chopped tomatoes, diced red onion, chopped green chilies, minced garlic, and chopped coriander.
- Squeeze the juice of one lime over the mixture and season with salt and pepper according to your taste.
- For best flavour, let the salsa sit in the refrigerator for about 30 minutes before serving to allow the flavours to meld together.
- For the Guacamole: Cut the avocados in half, remove the pit, and scoop the flesh into a mixing bowl. Mash the avocados with a fork until you achieve your desired consistency.
- Add the lime juice to the mashed avocado and mix well to incorporate.
- Stir in the diced red onion, diced tomatoes, chopped coriander, and chopped chili (if using).
- Season the guacamole with salt and pepper to taste. Mix everything together gently.
