• ½ clove garlic chopped
  • Sea salt
  • Freshly ground black pepper
  • 3 good handfuls fresh basil, leaves picked and chopped
  • 1 handful pine nuts, very lightly toasted
  • 1 good handful Parmesan cheese, freshly grated


  1. Grind the garlic with a pinch of salt and the basil leaves in a pestle and mortar.
  2. Next add half the parmesan – stir gently and add olive oil until you get an oozy consistency.
  3. Season to taste and add the remaining cheese. Easy and delicious!
  4. Instead of garlic bread try spreading your pesto on to a crusty loaf and toast – or even stir the pesto in to bread dough for a wonderfully fragrant roll.
