Bacon & Avocado on Toast

Ingredients

  • 2 ripe medium avocados
  • 8 pieces of thinly sliced bacon
  • 200g cream cheese
  • 1 tsp coarse mustard
  • 1 tsp honey
  • Sea salt & fresh pepper
  • 4-6 pieces of bread

Method

  1. Preheat the oven to 200°C/ 400°F. Cut the avocados in half and remove the stones. Remove the flesh from the skin by scooping it out with a large spoon then cut each half into 4 wedges.
  2. Cut the bacon slices in half and wrap around each piece of avocado. Place on a lined baking sheet and bake in the oven for 15 minutes.
  3. In a bowl, mix together the cream cheese, mustard, honey, salt and pepper. Toast the bread then top with a layer of cream cheese before finally placing the bacon and avocado wedges on top.
